Thanks for the update. I'm not sure, but I think this is related to one of these commits:

https://git.gnome.org/browse/evolution/commit/?id=9cef72782a0d62

which are part of the evolution 3.22.3 (currently in updates-testing). Tomas would know better.

If you'd have any more concrete steps, because I can create new mails, I do it almost daily, then it'll be helpful. Of course, trying with 3.22.3 would be even better.

Thanks, I have installed the 3.22.2 version from updates-testing and it seems to be working. I will report back if it fails.
