I am not sure why they can't make a CNAME for the root address as well as an MX record. Mail delivery will look for the MX first.
So: CNAME foo.com > foo.rhcloud.com
MX foo.com > 1.2.3.4
Everything but email will look at the CNAME.
Note that MX records must always point at IP addresses (per the spec).
