Description of problem (please be detailed as possible and provide log

When selecting Encryption enable toggle in the UI the storagecluster that gets generated does not have the encryption properties set.

Client OCP 4.6.2
Server OCP 4.6.2
OCS 4.6.0-183.ci

Yes manually deploy the cluster with a custom yaml file
