`desiredCanaryRoute` should verify that the parameter service is not nil, and that the service's Spec.Ports has len > 0.

The canary controller is new in 4.7, so this does not impact prior versions at all.

The ingress-operator specific crashes are no longer noted in the latest CI runs post the inclusions of these fixes hence marking this bug as "verified".
