Description of problem:
In the Event Sources tab (under Eventing Nav), when `All Projects` is selected & the user tries to create an ES/Channel, the project dropdown title in the create form shows `undefined`

Same with the `Channel` create form

Prerequisites (if any, like setup, operators/versions):
`Red Hat Openshift Serverless` operator should be installed

Steps to Reproduce
Goto `Eventing` -> `Event Sources`
 Select `All Projects` in the Projects dropdown
 Click on `Create` -> `Event Sources`
Actual results:
The project dropdown title shows `undefined`

Expected results:
`default` should be selected

Reproducibility (Always/Intermittent/Only Once):
Always

Project dropdown is set to default if no project is previously selected.
