The print to file option brings up a file selection dialog that is within whatever sandbox evolution is running within, the default of writing to the home folder results in writing to a tempfs that appears inaccessible from outside the sandbox, baring use of nsenter

Only option seemed to be saving to ~/.var/app/org.gnome.Evolution/data which is hardly reasonable

Thanks for a bug report. This particular one had been reported already, thus I'm marking it as a duplicate. See the other bug for the workaround.
