I am using LO Writer on a linux/fedora laptop.

Using the Anthy keyboard, I manage to enter Japanese characters just fine. After entering the hiragana characters, I press the space bar to then select the correct Kanji.
After pressing the space bar you will see a list/drop down of possibilities. Would it be possible to display the character under the cursor extra large?

You could run gnome-tweaks and customize the font size in "Fonts" -> "Monospace Text".

I see no advantage in changing the global font  size.
While selecting the correct Kanji, I have to look carefully at all the strokes. But once that I have chosen a Kanji, looking at the global form is enough to recognize it.

I don't know if Apple OS still has this feature but I remember having seen that when scrolling over the statusbar, only a small region under the cursor was enlarged. Maybe this could be added as extra feature the the cursor. Not only students Japanese would appreciate such a feature. Also visually handicaped users would profit.

I think gnome-tweaks would be enough for you.

I won't have a plan to enlarge the cursor.
