The initial OS version is set based on the puppet facts from the installer run IIRC. To get this information correctly refreshed, the advice would be to setup puppet agent on the Satellite too so all the facts about the hosts are periodically refreshed. Would that work? If puppet is not used, the same can be achieved with repeated Ansible configuration runs.
