Please branch and build webkitgtk for EPEL10

webkitgtk will not be included with EL10 (it was in previous EL's), so an EPEL10 build is desired.

FWIW, your comment in webkitgtk (commit 862ac4af ) was prescient:

Hey, I'm not planning to commit to maintaining this package in EPEL. The lifecycle is quite long and it will eventually become challenging to keep it updated.

I *could* do a build if you tell me how, but it's really probably not a good idea unless somebody else is willing to maintain it.

So, I have no idea why I was set in a override here for epel... :) 

I've reset it back to default, but I don't have any great desire to maintain this in epel10.
