As you mentioned in https://bugzilla.redhat.com/show_bug.cgi?id=2436839#c15 - the logs show you are missing the driver for your scanner, which gets installed automatically via weak dependency, so you might have installed main sane-backends without weak dependencies or removed weak dependencies in some transaction. The package you needed was sane-backends-drivers-scanners.

IIUC you installed the driver and the scanner works (with downgraded and stable gdk-pixbuf2), so I will close the issue.
