Sure, gpk-update-icon is resposible for checking for updates according to the user policy, handling any errors and is also responsible for watching certain files created by udev so we can prompt for firmware installation. Most users don't remember to run "yum update" on a daily occurance. If you really want to get rid of the GUI part, just go to Preferences->Personal->Sessions and uncheck PackageKit Update Applet.
