There should also be an option to set the default search engine for users who want an alternative to Google and Wikipedia when doing searches via the GNOME Shell's Activities Overview mode. You can already change the default editor by right-clicking on text file, and selecting the default application to open it with. I don't see how adding default text editor is going to help (especially as it's a slippery slope). If you want to discuss this more, feel free to discuss it upstream with the designers.
