Just reading the Virtualization Getting Started guide here:

Would it be a good idea to add the emulated watchdog devices here?         
Since RHEL 6.2, both i6300esb and ib700 should both be supported           
(and more importantly, working :-)                                         

Here is some representative text:                                          

=== Emulated watchdog devices ===                                          

Red Hat Enterprise Linux 6.0 and above provide two emulated                
watchdog devices. A watchdog can be used to automatically                  
reboot a guest when it becomes overloaded or unresponsive.                 

The watchdog devices are supported by the following guest                  
operating system:                                                          

* Red Hat Enterprise Linux 6.2 and above,                                  
for i386 and x86_64 architectures.                                         

You will need to install the 'watchdog' package in the guest.              

The two devices are:                                                       

* i6300esb, an emulated Intel(TM) 6300 ESB PCI watchdog device.            
This is the recommended device to use.                                     

* ib700, an emulated iBase 700 ISA watchdog device.
