As long as you install the xorg-x11-server-Xorg package and something that provides "service(graphical-login)", anaconda will set up X to automatically start. What are you doing that doesn't meet those criteria? I chose to build a VM server as the base, then had to choose X Window System as one of the additional packages to get X installed. Do you have the xorg-x11-xdm package installed? I don't remember what sub-packages were selected at that point. I've since reformatted and started over several times, with the Desktop core option being selected since then. After I get done fixing the software RAID-1 problems and get the system going, I'll likely be doing one final rebuild from the ground up and can do some poking around then.
