In the juddi-client's org/apache/juddi/v3/client/mapping/WSDL2UDDI.java file, the wrong tModelKey key type was specified. It was set to 'uddi:uddi-org:types', when it should have been 'uddi:uddi.org:categorization:types'. The name has been corrected so the tModel named uddi-org will now work as expected.
