The issue
kernel-xen-2.6.18-308.20.1.el5.i686 package doesn't update the /etc/grub.conf file correctly; it is containing an old default entry even though /etc/sysconfig/kernel states otherwise:

It seems modifying /etc/sysconfig/kernel to
  DEFAULTKERNEL=kernel-xen
solves the issue
