Description of problem:
Can't rename tab. Specified name doesn't appear. Tab name always "Terminal".

The default name for a terminal or tab is Mate Terminal, you can change that in preferences or in a profil.
Here command mate-terminal -t 'Hallo Sexy' --tab
opens a new tab with the name  Hallo Sexy  ;)

PS: if you want to edit an existing tab per right-cklick context menu, you need to allow that in preferences.

So, i see no issue here
