Description of problem:
Documentation for more complex enterprise-like examples of pipelines are missing. The documentation goes to the level of a simple "hello world" and no further. This gives adopting Tekton an unnecessarily steep learning curve. This hinders product adoption.

Try to learn tekton from scratch

Steps to Reproduce:
1. Read Tekton documentation
2. Throw hands up in despair
3. Use GitHub Enterprise

Actual results:


Expected results:
There should be several examples which demonstrate from source to deployment, with approval steps, and all the bells and whistles one would expect of an enterprise-grade pipeline.
