gnome-terminal --hide-menubar --fullscreen sometimes will do the right thing (full screen and no menubar), but often it doesn't make the term full screen, sometimes drawing the window in the upper left corner so top and left decorations aren't shown, but the size is smaller than the whole screen. This was seen both in FC6 and F7.
The correct option is --full-screen, but you are right that it seems to be a bit unreliable.
