FWIW when external snapshots provide the full spectrum of APIs to recreate the current snapshot experience in virt-manager, we will add support for them in the UI and discuss a transition strategy to make them the default. There hasn't been any movement on that front for years though. When things change we can open a (non-private) bug here to track progress
