I can only print to the default tray (letter sized paper) of my LaserJet
5Si printer when using the JetDirect "driver" provided by printconf.  I'd
like to be able to take advantage of the other trays (legal & envelope).

Hmmm.
Jetdirect is just a communications channel. You still have to tell the printer
about it's control options. Some of the drivers have this ability, some don't.
There were some problems with this, and they have been largely addressed.
