Description of problem:

Errors out-of-the-box on start of yum install ejabberd on fresh FC12 from Fedora repository.  Apparently even more errors appear on restart, with the consequence that ejabberd doesn't run.

Maybe there's a problem in the Fedora package, you aren't the first one to report:

Yes, that's a known issue, ant it will be resolved (not so) very soon.

The problem is that although ejabberd must be started by superuser, it drops privileges to ejabberd user. This is not a problem if you start ejabberd from the directory, which is accessible for 'ejabberd' user, but in case when you started it from /root, this will render to these messages.

Please, try running  /etc/init.d/ejabberd from some read-accessible (for ejabberd user) directory, f.e. from / and tell us about the results.

Tried to restart ejabberd from /root and seems to work flawlessly.
