In the System Settings --> Details --> Default Applications interface, I can't choose SeaMonkey for Web or Mail. I'm guessing there's probably a workaround to make it default anyway, but I haven't researched it.

It's because outdated desktop file.

I've edited both desktop files to follow the firefox and thunderbird ones.

2.16.2 build now in progress.

Package seamonkey-2.16.2-1.fc18:
* should fix your issue,
* was pushed to the Fedora 18 testing repository,
* should be available at your local mirror within two days.
Update it with:
# su -c 'yum update --enablerepo=updates-testing seamonkey-2.16.2-1.fc18'
as soon as you are able to.
