upstream effort has been done in https://issues.jboss.org/browse/WFCORE-187. Once we have two Acks for jboss-eap-6.3.z and pm_ack, we can include this to 6.3.3.

deployment-overlay add --name=myoverlay --content=/META-INF/persistence.xml=/tmp/persistence.xml --deployments=jboss-kitchensink-ear-*.jar --redeploy-affected

the deployment overlay is used and the application is redeployed.
