SwitchYard does not always return responses with the proper version of SOAP.

A fix is provided at https://issues.jboss.org/browse/SWITCHYARD-2741.

The culprit for the test failures seems to be this commit:
https://github.com/jboss-switchyard/components/commit/6ab991f4cce4817b63a5df182115796dbb171ae2

Note that the original fix didn't have the issue of the test failures.
