I temporarily downgraded to pulseaudio-11.1-7.fc27.x86_64.rpm.
I restarted pulseaudio using: pulseaudio --start -D Plugging in my headphones after this crashes it again, so one cannot use headphones with the system currently. This reproduces the bug each time, without fail. Increasing severity.

It appears hat including the upstreamed, 0093-alsa-fix-infinite-loop-with-Intel-HDMI-LPE.patch a fix toward, https://bugs.freedesktop.org/show_bug.cgi?id=100488 could be contributing to the problem here :( I'll look into making a build without that (and other unrelated upstream fixes)
Thanks Rex! Looking forward to testing. :-)

Still getting the crash report but issue is no longer occurring to me. False report?

When using pulseaudio-11.1-15.fc27 ?
Yes, I had to downgrade to pulseaudio-11.1-7.
