This sounds like fallout from https://gitlab.gnome.org/GNOME/gsettings-desktop-schemas/issues/2 - the default monospace font changed, and my guess is that it's not installed.

The .spec has

> Recommends: font(sourcecodepro)

but that's maybe not strong enough for RHEL?

The two possible fixes are either:
 - revert the default change downstream
 - make sure the font is installed

google-noto-mono-fonts-20161022-7.el8.noarch are installed is there any other font that I need to check?

The new default monospace font is 'Source Code Pro 10', which on Fedora is provided by the adobe-source-code-pro-fonts package. I assume it's the same on RHEL.

I'm afraid we don't have adobe fonts in rhel8. Or at least I can't find them.

yeah, even evo is fixed and is somehow consistent with one font only in html and plaintext. Thanks.
