Avoid pyproject-rpm-macros for EPEL 8

Description of problem:
In order to package packit for EPEL 8, we need python-PyGithub there as well. Could you please build it for EPEL 8?

There is a problem with pyproject-rpm-macros missing (obviously) in EPEL 8, so I'm attaching a patch reverting the switch to pyproject-rpm-macros.
