Verified on elasticsearch-operator.4.6.0-202103010126.p0.
1. Set clusterlogging/instance and kibana/kibana to Unmanaged.
2. Add ENV 
        - name: SERVER_MAXPAYLOADBYTES
          value: "9999
3. The maxPayloadBytes is 9999
$cat ./config/kibana.yml |grep server.maxPayloadBytes
server.maxPayloadBytes: 9999
