Description of problem:

Service Telemetry Operator v1.2.0 via STF 1.2.0 release is unable to install ElasticSearch via the latest ECK Operator due to too old a version requested by Service Telemetry Operator (7.5.1).

This was found post-testing as the ECK Operator updated and no longer supports ES 7.5.1 after the release.


Version-Release number of selected component (if applicable): stf-service-telemetry-operator-1.2.0


How reproducible: Every time


Steps to Reproduce:
1. install STF 1.2.0 with ES enabled
2. note ECK Operator refusing to install ES 7.5.1

Additional info:

Change requested ES version to 7.10.2, the final version released under the Apache v2 license.

I tested this yesterday and everything is good to go. ElasticSearch 7.10.2 is installed, and even from an STF 1.1 deployment once you migrate, the ECK will upgrade the ES to 7.10.2.
