I also got this crash.  Same version of bluez, slightly newer kernel (5.11.19-300.fc34.x86_64) but I've seen the symptoms ever since I upgraded to Fedora 34 and never when using Fedora 33.
It makes using a bluetooth headset unworkable since after maybe 10 minutes bluetoothd crashes.

Similar problem has been detected:

This crash happend while trying to enable Bluetooth from GNOME Settings.  The graphical button switch works, but nothing happens thereafter (I would expect at least a bluetooth scan to happen, but that's not the case).
