Additionally, the update to version 2.0.1 seems to have been made without decrementing Release or adding an appropriate changelog entry (like with rpmdev-bumpspec) on Fedora 34, which leads to the glusterfs-selinux package having a version that sorts higher on f34 than it does on f35.

I don't know what you think you achieved with the commit you pushed, but it did not fix the broken changelog.

Also, just incrementing Release arbitrarily is not how this is supposed to work.
Every change in either Version or Release should be accompanied by a well-formatted %changelog entry.

This bug appears to have been reported against 'rawhide' during the Fedora 36 development cycle.
Changing version to 36.

The issue is still there.

I also wonder why you "built the package for F37"?
When F37 was branched off of F36 (or rather, F36 was branched off of Rawhide, which is now F37), it inherited the previous build automatically.
