How are you opening PDF files in gthumb? When I browse the directory tree PDF files are not shown. I'm not sure that gthumb is even capable of this, which would explain the crash.
I used open with in Files. I understand gThumb cannot open PDF files. It should not crash, however. Consider this a fuzz test.
If you think the crash behavior is incorrect please file a bug upstream. I'm not sure what I could possibly do in the package to address it, other than update it to a future version if upstream decides to address it. https://gitlab.gnome.org/GNOME/gthumb/-/issues
