Description of problem:
There is no build of assimp for RHEL 9. Please branch and build assimp in EPEL 9.

Additional info:
The only missing dependencies in EPEL 9 for building the rawhide branch of assimp are irrlicht and irrXML. Version 5.1.0 of assimp drops these dependencies, so I thought it would be a good idea to just update assimp in Fedora so that no changes would be necessary to build for EPEL 9.

I've linked my PR to update to the latest version, 5.2.5. It builds successfully in both Fedora and EPEL 9, but I've found some issues related to `zlibstatic` in downstream packages which we'll need to address before merging, and I haven't tried building all downstream packages in Fedora to look for regressions.
