I don't have time to work on Octave anymore, so someone else needs to pick up the slack on Fedora EPEL.

I've been generally maintaining octave everywhere so I'll work on it.  We're currently missing deps though:

Requested to build gnuplot in EPEL10 in 2424544 . That should be feasible without changes hopefully as far as I tested (mockbuild and local OBS instance).

Otherwise right now besides gnuplot only xorg-x11-drv-dummy is missing: that will never (since migration to Wayland) come to EPEL 10 I believe. That is needed only for tests, I would suggest, at least in a first phase, we could make the %check phase a toggle that is disabled for el10, what do you think? Later on when we have then a solution to run tests with wayland, we can reenable that.

I'd be glad to contribute to this (and gnuplot as I see you have right there too ;) ) if possible!
