It's a common problem, many of the EL6 java applications can only be built under earlier JDKs.
This request was evaluated by Red Hat Product Management for
inclusion in the current release of Red Hat Enterprise Linux.
Because the affected component is not scheduled to be updated
in the current release, Red Hat is unfortunately unable to
address this request at this time. Red Hat invites you to

It builds with java 1.5 only as it was done. Please use gcj for the builds.

Build with GCJ-1.5
Just stumbled upon this issue as well.
In case that can be useful, I'm attaching the patch (to applly on the latest SRPM in RHEL6) I used to make the package build with GCJ-1.5, so that it can build in mock.
This is based on the instructions at http://fedoraproject.org/wiki/NativeJava
This patch has nothing to do with the fix.
The package builds fine because this patch BRs java-gcj-compat-devel, this change only will fix the build on systems having OpenJDK installed. But I don't agree that the build is broken in mock java-1.5.0-gcj-devel will be preferred by yum thus building just fine.

It isn't here.
When I try rebuilding the stock RHEL 6 source RPM in mock (after having purged the cache and previous buildroots), I get the following in root.log:

This is 100% reproduceable, I can upload the full mock logs if you want.
Unless of course there is something I'm doing wrong, in which case I would appreciate any pointer. :)
Can you find what is pulling java-1.6.0-openjdk-devel for you ?

Yum deps solver log
Here is the log of the build deps resolution (taken with debuglevel=3).
The relevant lines seem to be:

I cannot reproduce this on RHEL 6.3 -- the package builds fine.
We are unable to reproduce this bug in current Red Hat Enterprise Linux release. I am closing this bug as NOTABUG.
