Description of problem:
Use the edit menu to paste as a quotation some text into a composition window. Then go up to the subject and use the standard X paste to dump some text into the subject window. Hit crtl-z to undo.

The undo framework lives in GtkHtml and only applies to the editing area.  Evolution extends the basic GtkHtml editor with email fields, but unfortunately GtkHtml's undo framework is not engineered to be extended to other widgets, and GtkHtml is no longer under development.

Once Evolution abandons GtkHtml for WebKit/GTK+ the situation might change.
