Reading through a large (500 page) and highly graphical PDF... when using the mouse wheel to scroll between pages (I tend to work with dual-page display, non-continuous), Evince sometimes crashes. I can't reproduce the problem on-demand, but it's occurred about 4 times in the past hour. I think it's occurring when scrolling pages in quick succession, or flicking back and forward between consecutive pages.
