At the end of every RedHat install I have done is the setup for a printer
local or remote.  Printtool is still there but I don't use X on my servers
so it would seem I either need X or have to manually setup the printcap
file and others.  Also, there is no documentation about how to setup a
printer using either method in the 6.1 docs.

Am I correct in this or is there a config script/program that I am
overlooking?

This is true; we're working on a new tool that will work in text mode, but it
won't be ready until 7.0.
For now, the recommended way is to either create the config files on a different
computer and then copy them over, or to install X and printtool, create the
config files, and then remove X.
