Please branch and build python-hypothesis in epel9

This is needed for the test suite of python-pynacl, which in turn is needed by python-paramiko, which I co-maintain.

For my own local testing I built it using --without tests --without doc but I suspect that that's not an option for EPEL and there will be a substantial dependency chain to follow :-(

python-sortedcontainers is a runtime dependency of python-hypothesis.

good point, we can also just build nacl without tests. I'll close the request first while we think about it

I think disabling tests is perfectly fine - or carving out the tests to not depend on hypothesis. I do need pynacl for python-patatt so I'm hoping it can be branched soon.

After checking in with the EPEL Steering Committee - let's just branch this, and if it becomes too much to maintain we can retire it.
