A possible replacement for stock_weather-sunny might be weather-clear. For the other icons, your best path forward is to ship them with the application.

I posted this bug in pychess upstream, to maybe change the icons or something like that at: http://code.google.com/p/pychess/issues/detail?id=546 Leaving this open, till there is a definitive decision from gnome-icon-theme to never ship this anymore or from pychess to not use them/own icons.
