I've noticed, after disabling various plugins and playing around, that if I tell it not to do any junk mail filtering that it seems to be *a lot* more stable in that it actually seems to be vaguely usable. I don't know if this is a red-herring but it seems to work in my case. I can't reproduce it at will, it seems random, but having less plugins active helps.

Nothing consistent I'm afraid. I find that just using it, it crashes at random intervals during the day. I wondered if there is a threading problem. You can be just looking at emails and suddenly it will all hang and stop taking input, and then crash. I can send you a screenshot of ABRT with one report for evolution for every 10 minutes near enough in a single morning, which made me wonder if there is something to do with maybe the mouse event thread or similar, plus the thread polling the IMAP server, but I'm clutching at straws here.
I don't know if this has anything to do with it, but sometimes I see messages like this before it crashes (having run it from a terminal): *** glibc detected *** evolution: corrupted double-linked list: 0x00000000034049b0 ***

This message is a reminder that Fedora 13 is nearing its end of life. Approximately 30 (thirty) days from now Fedora will stop maintaining and issuing updates for Fedora 13.
